Tarragon has a peppery, slightly harsh and bitter flavour. It should therefore be used only sparingly. Although the herb is able to tolerate some heat, it should not be cooked for too long. Tarragon will unfold its full flavour in the best manner when it is combined with acidic ingredients (such as vinegar, mustard, wine and lemon juice).
Tarragon is an indispensable ingredient of classic French meat and fish dishes, such as mushroom and vegetable dishes. It is also used for flavouring white wine vinegar, mustard and pickled vegetables.
