Fennel is highly aromatic and has a sweetish flavour, mildly reminiscent of anise. It combines well with parsley, caraway, oregano and thyme. Its flavour can be intensified through pounding or fatless toasting.
With breads, baking goods and cakes. It is excellent with high-fat fish, such as mackerel, herring and salmon. Fennel can also be added to pork, lamb and pickled vegetables.
